Recipe Makes 2 Dishes
Sauce recipe
130 g ketchup
65 g cider vinegar
65 g light brown sugar
3 Tbsp. smoked paprika
2 tsp. chili powder
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. ground cloves
1 tsp. hot sauce (we use Tabasco)
1 tsp. Worcestershire sauce
¼ tsp. ground cayenne pepper
Salt, to taste
Method
Add all your ingredients together except the salt and bring to boil on a medium heat.
Once boiling simmer for 5 minutes, occasionally stirring
Add salt to taste
Main Dish Ingredients
4 chicken Thighs
4 rashers bacon smoked
240 ml BBQ sauce
50 g grated mature cheddar cheese
2 good size Potatoes
1 head of Broccoli
Crispy Onions
Method
Preheat the oven to 200C
Wrap two chicken thighs in two rashers of bacon and place in a shallow baking dish.
Place in the oven and cook for 25 minutes – until the chicken is cooked through
Cube your Potatoes & Boil or steam them
Once boiled, mash with a bit of Butter & cream and season well
Remove the dish with the chicken from the oven. Spoon the BBQ sauce on the chicken.
Sprinkle the chicken with the cheddar cheese
Place back in the oven for 5 minutes, until the cheese has melted.
Plate up and finish with crispy onions
